Stock canned sockeye salmon in your pantry for quick and easy meals:
Add canned sockeye to your favorite salads in place of tuna or other proteins. Try it on a Caesar Salad or a Niçoise; or even a simple hearty lettuce dressed with olive oil, lemon, and a dab of mustard.
For a sandwich filling, mix canned sockeye into a bowl with mayonnaise, breaking up the filet and combining it with capers, chopped shallots, and green herbs such as tarragon or dill; or top whole rye bread slices with flaked salmon, a squeeze of lemon, and some pungent greens.
Toss canned sockeye into your favorite pasta dish, cooking just long enough to warm the fish. Canned sockeye is especially great in a puttanesca-style sauce, with chopped tomatoes, pine nuts, capers, parsley, olives and garlic. Just sauté the sauce in a pan with olive oil and toss in the salmon for 30 seconds towards the end of cooking.
Kids love the approachable flavor of canned sockeye salmon. For a quick and simple kid's pasta, melt a few tablespoons of butter in a skillet while you boil spaghetti. Crack fresh black pepper into the butter and let toast for a minute. Reserve half a cup of pasta water, drain the pasta, and add it to the skillet with butter and some of the reserved water. Toss in the salmon, add in a cup of shaved Parmesan and mix in. Add a little more pasta water if the sauce is too dry and serve!
